Sweet Whey
4 servings
Ingredients
- 1 l fresh cow's milk
- 5 g vinegar
- 1 pcs egg white
- 10 g magnesia, carbonated
Instructions
- Bring 1 liter of fresh cow's milk to a boil and add 5 grams of vinegar as it begins to simmer.
- After curdling, strain the semi-cooled liquid, bring to a boil with beaten egg whites, strain again, add 10 grams of carbonated magnesia, and pour through filter paper.
- Whey can be made more simply with whey pastilles available at the pharmacy: prepare a large teacup of fresh milk, add a whey pastille to the hot milk, let it curdle, and pour through a cloth.
Modernized from a treasured 19th-century German cookbook.
