Dumplings and Stuffings
Milk Dumplings
4 servings
Ingredients
- 1.5 l milk
- cinnamon (a little)
- lemon zest (a little)
- sugar (a little)
- salt (a little)
Instructions
- For 4 people, heat 1½ l milk, add a little water if desired, season with cinnamon, lemon zest, sugar, and a little salt, and bring to a boil.
- Prepare a dumpling dough beforehand as for bread roll dumplings, then use a spoon, dipping it into the boiling milk each time, to scoop dumplings, adding them individually to the boiling milk and cooking until done.
- The dish tastes even heartier if you omit sugar and spices and only salt the milk.
Modernized from a treasured 19th-century German cookbook.
