Wine Pudding

Ingredients
- 1 bottle Rhine wine
- 12 pcs egg yolks
- 250 g sugar
- 50 g calf's foot jelly or gelatin
- 1 pcs lemon (juice and zest)
- cinnamon (whole) (a little)
Instructions
- Place wine, sugar, and spices on the heat, covered, and bring to a boil.
- Add the gelatin and cook thoroughly, then remove the spices.
- Take the pot off the heat and carefully stir in the egg yolks, whisked with a little cold water, to prevent them from curdling.
- Quickly pour the mixture into a bowl, stir for a few more minutes, and fill into a porcelain mold brushed with almond oil.
- Once cooled, invert the pudding and serve with a vanilla sauce.
