Turin Orange Dish

Ingredients
- 4 pcs oranges
- sugar (for sprinkling) (as needed)
- 0.5 bottle apple wine
- 100 g sugar
- 6 pcs egg yolks
- 30 g potato flour
- 6 pcs egg whites
- ladyfinger slices (as needed)
- butter (for the mold) (a little)
Instructions
- Peel and skin the oranges, slice them, remove seeds, and sprinkle generously with fine sugar.
- After a few hours, drain them on a sieve, and vigorously whisk the collected juice with the apple wine, sugar, egg yolks, and potato flour.
- Stir over low heat to form a thick cream, continue stirring until cooled, and fold in the beaten egg whites.
- Line a buttered mold densely with slightly overlapping ladyfinger slices, pour in the cream, and cook the dish in a water bath for 40-50 minutes.
- After cooling slightly, unmold, let cool completely, and top with the orange slices.
