Turin Orange Dish

  1. Peel and skin the oranges, slice them, remove seeds, and sprinkle generously with fine sugar.
  2. After a few hours, drain them on a sieve, and vigorously whisk the collected juice with the apple wine, sugar, egg yolks, and potato flour.
  3. Stir over low heat to form a thick cream, continue stirring until cooled, and fold in the beaten egg whites.
  4. Line a buttered mold densely with slightly overlapping ladyfinger slices, pour in the cream, and cook the dish in a water bath for 40-50 minutes.
  5. After cooling slightly, unmold, let cool completely, and top with the orange slices.
