Cold Desserts
Snowball with Vanilla Sauce
4 servings
Ingredients
- 1 l milk
- 8 pcs eggs
- 100 g sugar
- 1 upper cup sweet almonds
- 0.5 pcs vanilla (pod)
- cinnamon (a little)
- 1 tsp wheat flour
Instructions
- Slowly bring the skinned, finely crushed almonds with milk, sugar, and cinnamon to a boil.
- Meanwhile, beat the egg whites until stiff, then, on a shallow dish, use a knife to shape them into a smooth, round, mountain-like form.
- Place the egg white mountain onto the boiling milk and carefully spoon some of the hot milk over it from time to time until the snow is cooked through—this will only take a few minutes.
- Gently remove the snowball with two flat slotted spoons and place it in a deep bowl.
- Whisk the egg yolks with cold milk and wheat flour and, after removing the pot from the heat, gradually add this mixture to the boiling vanilla milk while stirring vigorously.
- Stir the sauce a little more, then pour it around the snowball, ensuring the snowball remains unstained by the sauce.
