  1. This drink, originating from Bulgaria, is by no means as difficult to make as some believe.
  2. Obtain yogurt cultures; 1 heaped tablespoon is enough for 1 liter of the drink.
  3. Boil a little over 1 liter of milk well in a milk cooker, then let it cool down thoroughly or completely.
  4. Then add the yogurt cultures and let the milk stand in a moderately warm place for 24 hours—in the summer, in the kitchen or a not-too-cold pantry, in the winter, near a moderately warm stovetop.
  5. Afterward, pour the mixture through a large-holed colander, where the cultures will remain.
  6. Drink the drained, thick milk cold after sweetening it with sugar.
  7. Rinse the cultures, which are reused daily, with cold water every few days.
