Maraschino Sorbet

Ingredients
- 500 g Sugar
- 1 cup Water
- 1 tbsp Rose water
- 1 tbsp Orange water
- 0.5 l Water
- 2 pcs Lemons, juice
- 4 pcs Egg whites
- 6 glass Maraschino
Instructions
- Clarify 500 grams of sugar with 1 large cup of water, stir in 1 large tablespoon of rose water and 1 tablespoon of orange water, then transfer to a terrine and pack in ice to freeze.
- When the mixture is almost frozen, vigorously and quickly stir in ½ liter of water, the juice of 2 lemons, and the whites of 4 eggs beaten to a stiff foam, using a wooden spatula.
- Finally, just before serving, stir in 6 small glasses of maraschino.
- After stirring this with the mixture for 4-5 minutes, the sorbet should appear white and is then served immediately.
