Baked Pastries, Charlottes, and Strudels
Lemon or Orange Dish

Ingredients
- 1 piece lemon zest (grated)
- 200 g sugar
- 1 cup cream
- 75 g flour
- 4 tbsp cream (cold, for mixing)
- 100 g butter
- lemon juice (from 1 lemon) (a little)
- 4 pieces egg yolks
- 4 pieces egg whites (beaten)
- sugar (for sprinkling) (a little)
- lemon juice (for drizzling) (a little)
Instructions
- Grate the zest of one lemon onto the sugar, crush, and sift.
- Bring one cup of cream to a boil, then add the flour mixed with cold cream, sugar, butter, and the juice of one lemon.
- Bring everything to a boil a few times and let it cool.
- Gradually stir in the egg yolks and then the beaten egg whites.
- Pour the mixture into a greased and floured dish and bake for three-quarters of an hour at moderate heat.
- Before serving, sprinkle with sugar, drizzle with lemon juice, and return the dish to the oven for a few minutes to glaze.
- This dish can also be prepared with oranges in the same manner.
