Baked Pastries, Charlottes, and Strudels
Sponge Dish or Potato Flour Dish

Ingredients
- 100 g butter
- 0.5 cup potato flour
- 0.5 l milk (boiling)
- 5 pcs egg yolks
- 100 g sugar
- lemon zest (grated) (a little)
- 5 pcs egg whites (beaten)
- butter (for the mold) (a little)
Instructions
- Heat the butter in a casserole over a gentle heat, stir in the potato flour, and continue stirring until the flour curls.
- Stir in the boiling milk until a very smooth porridge forms.
- Once the porridge has cooled, beat the egg yolks with sugar and grated lemon zest until frothy, gradually add the porridge, and when everything is well mixed, fold in the beaten egg whites.
- Bake the dish in a generously buttered mold in a water bath for just under one hour.
- Invert and serve with chaudeau sauce.
