Baked Pastries, Charlottes, and Strudels
Sago Dish

Ingredients
- 125 g sago
- 0.5 l milk
- salt (a little)
- cinnamon (whole) (a little)
- 100 g butter
- 100 g sugar
- 5 pcs egg yolks
- 5 pcs egg whites (beaten)
- wine sauce (for serving) (as needed)
Instructions
- Wash the sago several times in cold water, cover with cold water, bring to a boil, pour into cold water to cool, and after draining the water, add to the boiling milk and cook until tender with a little salt and whole cinnamon, stirring constantly as it tends to stick.
- Stir butter and sugar into the hot sago and let it cool.
- Then mix the egg yolks well with it and finally fold in the beaten egg whites.
- Bake the dish in the mold for about one hour, protecting it from strong top heat, and serve with wine sauce.
- When serving, press lightly against the bottom of the mold so that it lifts with the dish, and place it without the rim on a flat dish.
