Almond Dish

Ingredients
- 100 g sweet almonds
- bitter almonds (some) (a little)
- 4 pcs egg yolks
- 150 g sugar
- lemon zest (from ½ lemon) (a little)
- 25 g breadcrumbs (grated)
- 4 tbsp rum
- 4 pcs egg whites (whipped)
- Chaudau sauce (for serving) (as needed)
Instructions
- Finely crush the sweet almonds and some bitter almonds.
- Beat egg yolks with sugar until frothy, add the grated lemon zest, grated breadcrumbs, and almonds, and mix everything for about half an hour.
- Finally, add rum and the whipped egg whites.
- Bake the dish in a water bath at moderate heat for an hour, unmold, and serve with Chaudau sauce.
