Linzer Apple Dish

Ingredients
- 100 g butter
- 1 piece egg (hard-boiled, yolk)
- 4 piece egg yolks (raw)
- 100 g sugar
- 100 g rusk (crushed)
- lemon zest (grated, from 1 lemon) (a little)
- apples (cooked into a purée) (8-10 pieces)
- 4 piece egg whites (beaten)
Instructions
- Cream the butter, then gradually mix in the yolk of the hard-boiled egg, the raw egg yolks, and the sugar.
- Add crushed rusk, grated lemon zest, and apples cooked into a purée.
- After stirring for one hour, fold in the beaten egg whites.
- Bake the dish for one and a quarter hours at moderate heat and serve without sauce, unmoulded.
