Baked Pastries, Charlottes, and Strudels
Potato Dish

Ingredients
- 125 g potatoes (cooked in their skin, peeled, grated)
- 75 g butter
- 100 g sugar
- 50 g almonds (grated, some bitter ones among them)
- lemon zest (grated, from 1 lemon) (a little)
- 4 pcs egg yolks
- 2 tbsp rusk (crushed, moistened with cream)
- egg whites (whipped) (as needed)
- Chaudau sauce (for serving) (as needed)
Instructions
- Weigh the cooled, peeled, and finely grated potatoes.
- Cream the butter, then add sugar, grated almonds, grated lemon zest, egg yolks, the grated potatoes, and the crushed rusk moistened with cream.
- After everything is well mixed, fold in the whipped egg whites and bake the dish in a mold at moderate heat for a good hour.
- Serve unmolded with Chaudau sauce.
