  1. Fill a wine bottle halfway with picked tarragon leaves and press them down slightly with a stopper.
  2. Fill the bottle to the top with wine vinegar, cork it, and seal with paper.
  3. After shaking the leaves with the vinegar, place the bottle in the sun and let it infuse for 6 weeks.
  4. Afterward, pour the vinegar through a muslin cloth into smaller bottles, seal them well, and store.
