Cream Puffs

Ingredients
- 500 g water
- 250 g flour (fine, sifted)
- 250 g butter
- 8 pcs eggs
- mace or lemon zest (a little)
- whipped cream (for filling) (as needed)
- sugar (for sprinkling) (a little)
Instructions
- Bring butter and water to a boil, stir in the flour, and continue stirring until the mixture pulls away from the pot.
- As soon as it's no longer too hot but still warm, gradually beat in the eggs with a little mace or grated lemon zest, stirring constantly, ensuring each egg is fully incorporated before adding the next.
- Using a spoon dipped in cold water, place walnut-sized portions of dough onto a floured baking sheet, leaving ample space between them, and immediately slide into a strongly heated oven until the balls are golden.
- Once cooled, cut open, fill with whipped cream, sprinkle with sugar, and serve fresh.
