Silesian Stollen

Ingredients
- 1.5 kg Flour
- 0.5 l Milk (lukewarm)
- 7 pcs Egg yolks
- 70 g Yeast
- Salt (a little)
- 0.5 l Butter (clarified)
- 250 g Raisins (pitted)
- 200 g Sugar
- 125 g Almonds (coarsely crushed)
- 30 g Yeast (additional)
- Lemon zest (grated) (a little)
Instructions
- Prepare a dough from flour, lukewarm milk, egg yolks, yeast, and a little salt, and let it rise in a warm place.
- Then incorporate the clarified butter, raisins, sugar, coarsely crushed almonds, additional yeast, and grated lemon zest, and let the dough rise again.
- Form into a long loaf, make two jagged cuts lengthwise, brush generously with melted butter, and bake at the first heat setting for three-quarters of an hour.
