Rice Bread
4 servings
Ingredients
- 1 kg Rice
- Milk (as needed)
- 1 kg Rice flour
- 2 kg Wheat flour
- 100 g Yeast (dissolved)
- Water (as needed)
- Salt (to taste)
- Egg (for brushing) (a little)
Instructions
- Cook the rice in milk until gelatinous, then mash it.
- While still warm, add rice flour, wheat flour, dissolved yeast, and enough water to form a smooth dough; salt to taste.
- Knead the dough well, let it rise, then shape it into long or round loaves as desired.
- Brush with beaten egg and bake in a well-heated oven.
- Rice bread should be consumed fresh, as it tends to become brittle otherwise.
Modernized from a treasured 19th-century German cookbook.
