King's Cake

Ingredients
- 500 g Butter (clarified)
- 12 pcs Egg yolks
- 500 g Sugar
- 1 pcs Lemon (zest and juice)
- 75 g Sweet almonds (finely chopped)
- 15 g Bitter almonds (finely chopped)
- 125 g Currants
- 125 g Candied citron (finely chopped)
- 500 g Flour
- 2 tsp Baking powder
Instructions
- Cream the clarified butter until fluffy, then gradually add egg yolks, sugar, grated lemon zest and lemon juice, and finely chopped sweet and bitter almonds, stirring constantly.
- Mix in currants, finely chopped candied citron, flour, and finally baking powder.
- Fold in the stiffly beaten egg whites, fill the dough into oblong molds, and bake at moderate heat for one and a half to two hours.
