Meringues or Spanish Wind

Ingredients
- 500 g sugar (sifted)
- vanilla (finely ground with sugar) (a little)
- 8 pcs egg whites
- sugar (for sprinkling) (a little)
- jelly or jam (for filling) (a little)
Instructions
- Beat the egg whites until so firm they can be cut, then slowly sprinkle in sugar and vanilla while continuing to beat.
- Fill the mixture into a tightly sealed, pointed bag, cut off the bottom tip slightly, and carefully place small mounds onto a wax-greased baking sheet.
- Sprinkle with sugar and bake slowly at a medium-low heat; the meringues should bake very gently and barely turn pale yellow.
- After cooling, remove from the sheet, spread the flat side with jelly or jam, and place two together.
