Herring Casserole

Ingredients
- 1 soup plate cooked, grated potatoes
- 1 tbsp butter
- 1 top cup sweet cream, hot
- salt (a little)
- 6 pcs egg yolks
- nutmeg (a little)
- 2 pcs soaked, deboned herrings, finely diced
- 1 saucer onions, browned in butter
- pepper (a little)
- 6 pcs egg whites
Instructions
- Proceed as for the potato casserole, but omit almonds, sugar, and lemon zest.
- Instead, stir in a little nutmeg, the finely diced flesh of 2 soaked, deboned herrings, as well as 1 saucer of onions browned in butter and a little pepper into the potato-egg yolk mixture.
- Finally, fold in the beaten egg whites and bake like the potato casserole.
