Apple Sauce Casserole
6 servings
Ingredients
- 500 g tart apples
- 8 pcs egg whites
- sugar, for sprinkling (a little)
- almonds or macarons, crushed (a little)
Instructions
- Prepare a thick apple sauce from the apples and reduce it on the stove; for every 200 g of sauce, use 8 egg whites.
- Beat 4 egg whites until very stiff and fold into the hot sauce.
- Let cool, then add the stiff egg whites from the remaining 4 eggs.
- Fill the sauce into the dish, sprinkle with sugar and crushed almonds or macarons, pierce several times with a knife all the way to the bottom, and bake in a moderately hot oven for ½ hour.
- Serve immediately, as the casserole tends to collapse easily.
Modernized from a treasured 19th-century German cookbook.
